A Portal Above the Cantina, Gilbert Perez Bar Is Coming to Sherman Oaks
The team behind Mírate and Daisy is heading upstairs on Ventura Boulevard with a Mexican rum bar and a strict no-photos policy.
Soon, the stairs above Daisy Margarita Bar on Ventura Boulevard will lead, by design, somewhere else. Gilbert Perez Bar, at 14633 Ventura Blvd., comes from the team behind Mírate and Daisy, and The Infatuation lists it among the city’s October openings.
The name comes from the legend of Gil Pérez, a 16th-century Spanish soldier said to have been mysteriously transported from Manila to Mexico City. Daisy’s own telling dates the story to 1593. The bar takes the idea literally and invites guests to “Book a portal to Mexico.”
Daisy describes it as “a captivating Mexican rum bar that utilizes tropical flavors, spectacle, and a splash of chaos to provide an immersive cocktail experience.” The Infatuation says the menu is built on tropical cocktails made with Mexican rum, in a space dressed with decor from different regions of Mexico.
The pedigree downstairs helps. Time Out reported in 2025 that Max Reis would launch the bar on Daisy’s second floor, and noted that Mírate made the North America’s 50 Best Bars list.
One rule worth knowing before you go. The bar has a no-photos policy. It will keep short hours, too, Thursday through Saturday from 6 p.m.
